Tofu and Oyster Mushroom Stir-Fry Recipe

This healthy and delicious vegetarian stir-fry with tofu and oyster mushrooms is ideal for busy weeknights.

Ingredients

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes

Instructions

  • Whisk together the soy sauce, cornstarch, sesame oil, ginger, and garlic in a small bowl.
  • In a large skillet over high heat, heat the vegetable oil.
  • Cook until the tofu is lightly browned, about 5 minutes.
  • Cook for 3-4 minutes more after adding the oyster mushrooms and red bell pepper to the skillet.
  • Pour the soy sauce mixture over the tofu and vegetables and continue to stir-fry for another 2-3 minutes, or until the sauce has thickened and evenly coated the tofu and vegetables.
  • Season to taste with salt and pepper and serve hot.
