Salmon Pancakes Recipe

Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
- Whisk together the milk, egg, and melted butter in a separate bowl.
- Stir together the wet and dry ingredients until just combined.
- Fold in the drained and flaked salmon, as well as the parsley.
- Cooking spray or butter should be lightly coated in a nonstick skillet over medium heat.
- Drop the batter into the skillet with a 1/4 cup measuring cup and cook until bubbles form on the surface and the edges begin to dry, about 2 minutes.
- Cook for an additional 1-2 minutes, or until the pancake is golden brown and cooked through.
- Repeat with the remaining batter, adding more cooking spray or butter as needed to the skillet.
- Serve the salmon pancakes hot, topped with sour cream, chopped green onions, or lemon wedges.
