Salmon Pancakes Recipe

These savory salmon pancakes are a delicious and original take on traditional pancakes. Flaked salmon, fresh parsley, and a dash of black pepper combine to make a flavorful and filling meal. They are ideal for breakfast, brunch, or a light dinner.

Instructions

  • In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
  • Whisk together the milk, egg, and melted butter in a separate bowl.
  • Stir together the wet and dry ingredients until just combined.
  • Fold in the drained and flaked salmon, as well as the parsley.
  • Cooking spray or butter should be lightly coated in a nonstick skillet over medium heat.
  • Drop the batter into the skillet with a 1/4 cup measuring cup and cook until bubbles form on the surface and the edges begin to dry, about 2 minutes.
  • Cook for an additional 1-2 minutes, or until the pancake is golden brown and cooked through.
  • Repeat with the remaining batter, adding more cooking spray or butter as needed to the skillet.
  • Serve the salmon pancakes hot, topped with sour cream, chopped green onions, or lemon wedges.
