These Smoked Salmon and Avocado Rice Cakes make an excellent appetizer or snack. They're quick and flavorful, thanks to the combination of creamy avocado, fragrant dill, and smoky salmon.

  • Prep Time: 15 minutes
  • Cook Time: 6 minutes
  • Total Time: 21 minutes

Instructions

  • Combine the cooked sushi rice, mashed avocado, chopped dill, and garlic powder in a medium mixing bowl.
  • Make 8 small cakes out of the mixture.
  • Heat the olive oil in a large nonstick skillet over medium heat.
  • Cook the rice cakes for 2-3 minutes on each side, or until lightly browned and heated through.
  • Place the rice cakes on a platter to serve.
  • Add a slice of smoked salmon, a few slices of green onion, and a drizzle of lemon juice to each rice cake.
  • Season to taste with salt and freshly ground black pepper.
  • Serve right away.
