Trout with Rice and Carrots Recipe

This meal is a healthy and flavorful combination of tender trout fillets, fluffy rice, and sautéed carrots. It's quick to make and ideal for a busy weeknight dinner.

  • Prep Time: 10 minutes
  • Cook Time: 35 minutes
  • Total Time: 45 minutes

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Rinse the rice and combine it with 2 cups of water in a pot.
  • Bring to a boil, then reduce to a low heat and continue to cook for 18-20 minutes, or until the rice is tender.
  • Peel the carrots and cut them into thin rounds.
  • In a medium saucepan, heat the olive oil.
  • Add the carrot rounds and cook for 5-7 minutes, or until tender.
  • Season the fillets of trout with salt and pepper.
  • Line a baking sheet with parchment paper and place the trout fillets on it.
  • Bake for 15-18 minutes, or until the trout fillets are cooked through.
  • Serve the trout fillets over cooked rice with sauteed carrots on the side.
