Instructions

  • Warm the olive oil in a large pot over medium heat.
  • Sauté the onion and garlic until fragrant, about 2-3 minutes.
  • Sauté the sliced mushrooms for 5 minutes, or until they release their moisture.
  • Pour in the white wine and reduce it by half.
  • Bring to a boil with the broth.
  • Cover the pot with the mussels.
  • Cook for about 5-7 minutes, or until the mussels open.
  • Any mussels that do not open should be discarded.
  • Season with salt and pepper to taste after adding the heavy cream.
  • Garnish with chopped parsley and serve hot.
