Instructions

  • Preheat the oven to 400°F (200°C).
  • Potatoes should be washed and dried.
  • Place in a baking dish and cut into small wedges.
  • Drizzle 1/4 cup olive oil over potatoes and season with salt and black pepper.
  • To coat evenly, toss.
  • Bake for 30-40 minutes, or until potatoes are tender and lightly browned.
  • Season the cod fillets with salt and black pepper while the potatoes are baking.
  • 1/4 cup olive oil and minced garlic in a skillet over medium heat.
  • Cook for 1 minute, or until the garlic is fragrant.
  • Cook the seasoned cod fillets for 3-4 minutes on each side, or until cooked through.
  • Remove potatoes from oven and top with fresh parsley.
  • Serve alongside cod fillets.
