Scallop and Asparagus with Collard Greens Recipe

The delicate flavor of scallops is combined with the fresh crunch of asparagus and the hearty, slightly bitter taste of collard greens in this dish. Ideal for a nutritious and filling meal.

  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • In a large skillet over medium-high heat, heat 1 tablespoon olive oil.
  • Sear scallops until golden brown, about 2-3 minutes per side, seasoning with salt and black pepper.
  • Place aside.
  • Sauté the garlic in the remaining olive oil in the same skillet until fragrant.
  • Add the collard greens and sauté for 3-4 minutes, or until wilted.
  • Continue to sauté for another 2-3 minutes, or until the asparagus is tender-crisp.
  • Squeeze lemon juice over the vegetables and season to taste with salt and black pepper.
  • Plate the vegetable mixture and top with the seared scallops.
  • Serve right away.
