Instructions

  • Whisk together the flour, baking powder, and salt in a mixing bowl.
  • In a separate bowl, combine the ice water and egg.
  • Stir together the wet and dry ingredients until just combined.
  • It's fine if the batter is lumpy.
  • In a deep, heavy pot or skillet, heat about 2 inches of vegetable oil over medium-high heat until it reaches 375°F.
  • Allow any excess batter to drip off each shrimp before dipping it into the batter.
  • Place the shrimp carefully into the hot oil, frying in batches if necessary to avoid overcrowding the pot.
  • Cook for 2-3 minutes per side, or until the batter is golden brown and crispy.
  • Transfer the shrimp to a paper towel-lined plate to drain using a slotted spoon or spider.
  • Serve the shrimp tempura immediately with your favorite soy sauce or dipping sauce.
