Instructions

  • In a large pot over medium heat, melt the butter.
  • Whisk in the flour to make a roux.
  • Whisk in the milk and heavy cream gradually, stirring constantly, until the mixture is smooth.
  • Combine the onion, celery, green bell pepper, garlic, tomato paste, salt, black pepper, and cayenne pepper in a large mixing bowl.
  • Cook for 20 minutes, stirring occasionally, at a low heat.
  • Cook for 10 minutes more after adding the crabmeat and sherry.
  • Serve immediately.
