Grilled Tilapia and Jollof Rice Recipe

The flavors of grilled tilapia are combined with aromatic and spicy jollof rice in this recipe. The tilapia is seasoned with salt, pepper, and paprika before being grilled until done. Jollof rice is made with onions, garlic, and ginger, as well as diced tomatoes and spices such as paprika, cumin, curry powder, and thyme. It's ideal for a family dinner or a special occasion.

Instructions

  • Preheat the grill to medium-high.
  • Salt, pepper, and paprika season the tilapia fillets.
  • Grill the tilapia for 4-5 minutes per side, or until cooked through.
  • Warm the vegetable oil in a large pot over medium heat.
  • Sauté the onion, garlic, and ginger for 3-4 minutes.
  • Combine the diced tomatoes, paprika, cumin, curry powder, thyme, salt, and black pepper in a mixing bowl.
  • Cook for about 2-3 minutes.
  • Stir in the rice to coat the grains with the tomato mixture.
  • Bring to a boil with the water.
  • Reduce the heat to low, cover, and leave to cook for 20-25 minutes, or until the rice is tender.
  • Grilled tilapia should be served with jollof rice and lemon wedges.
