Seafood Recipes : Molluscs : Oysters Kilpatrick

Ingredients
6-12 oysters (per person)
1 green onion or shallot (per person), finely sliced
2 rashers bacon per person, finely diced
50ml / 2 oz per person
Worcestershire sauce. 50ml / 2 oz per person
A1 Steak sauce
juice of half a lemon per person.
1 teaspoon garlic Tabasco per person

Directions
1. Fry bacon until almost crispy, drain and put to one side.

2. Shuck oysters (discard top shell and separate meat from lower shell, return to shell).

3. Sprinkle sliced spring onion on each oyster. Top each oyster with a generous amount of bacon. Mix liquid ingredients and spoon over each oyster.

4. Place oysters on ovenproof plate/tray which has a layer of rock salt (rock salt will hold the oysters steady and stop them tipping and spilling their juices). Grind a small amount of black pepper over each oyster.

5. To serve: Preheat Griller/broiler or oven (high 350/375) and broil/grill/bake oysters for approximately 6 minutes or until bacon crisps and browns slightly. Se rve as quickly as possible with a little crusty bread to soak up the juices.

5. Oysters can be prepared to this point a couple of hours in advance and returned to refrigerator covered with plastic wrap..
